Whenever I take the kids grocery shopping at Cardenas both of them will shout, "Can we get poh-chata?!!". Also known as Horchata :) So when I came across this recipe on Pinterest I thought it would be perfect to try! Here's how that went:
I didn't think about documenting this til they were out of the oven so I have no pictures of the batter. But it was pretty!
So this is them, out of the oven.
This is the ingredients for frosting, minus the whipping cream. It was still in the fridge :)
Mix away!

I tried to get all "foodie" and get a close up of it, just take my word for it though. The frosting is SOO GOOD!

Horchate Cupcakes
1 stick of butter, softened
1 1/2 cups sugar
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup of Horchata (in liquid form)
1 tsp vanilla
1 tsp cinnamon
4 large egg whites
Set your oven to 350 :)
Mix the sugar and butter and beat for 2-3 minutes. (its going to look crummy)
Mix (in a seperate bowl!) all your dry ingredients.
In ANOTHER seperate bowl, whisk together the horchata and vanilla.
Add flour and Horchate mixture to butter and sugar in 3 parts, alternating between flour, horchata, beat. flour, horchata, beat. Set aside.
In ANOTHER clean bowl, beat egg whites til soft peaks form. Fold them into batter using a spatula. Don't over work.
Bake 20 min.
Horchata Frosting!!!
2 cups whipping cream
4 tbsp confectioners sugar (aka powdered sugar)
6 tbsp of the dry horchata mix
1 tsp vanilla
Whip cream and sugar in a cold metal bowl. (I didn't have one, so I stuck a glass bowl in the fridge while the cupcakes were baking :P
Once it has thickened, add horchata and mix til well incorporated. It gets super thick and starts to look like frosting, I promise.
Add vanilla... YUM
I shouldn't have to tell you this but, MAKE SURE the cupcakes have COMPLETELY cooled BEFORE you start to frost them. DUH!
Then devoure... and lick the bowl of leftover frosting.
I seriously can't wait til Omar gets home so I can shove one in his mouth. He kept doubting me on the awesomeness of these cupcakes and boy will he eat his words ;)
